Summary
The main objective of the NOVISHPAK project is to develop innovative biodegradable, antimicrobial and intelligent packaging films and edible coatings based on polysaccharides from seaweed, which are used to extend the shelf life of fish fillets from the Mediterranean region. Our approach includes the use of biodegradable film materials made from polysaccharides and bioactive compounds derived from kelp algae, as well as gelatine from fish fillet skin waste. Antimicrobial agents and microbiomes are incorporated to prevent food spoilage and a non-thermal technology, cold atmospheric plasma, will improve film properties without compromising antimicrobial efficacy. The packaging solutions developed are suitable for various fish and fish products and improve stability in terms of microbial growth and oxidation of fish fats, which benefits the most consumed fish products in the Mediterranean region. To further reduce food waste, NOVISHPAK will introduce decision support systems with ICT-based sensors to monitor O2, CO2 and ammonia in packaged products. These sensors, integrated into a mobile app, will provide producers, retailers and consumers with real-time information for efficient handling and spoilage prevention.
