Summary
Ethylene (C2H4), a ripening hormone biosynthesized by fruit and vegetables, can accumulate within packaging and expedite the ripening process, consequently affecting the shelf life of fresh produce. The effective mitigation of ethylene during post-harvest storage is imperative for prolonging the shelf life of fresh produce, as it regulates ripening and preserves quality parameters such as color and firmness. While prior research has extensively investigated the prediction of oxygen, water vapor, and carbon dioxide levels in modified atmosphere packaging, there is a noticeable dearth of studies on predicting ethylene accumulation within fruit packages. Accurate prediction of ethylene accumulation within perforated fruit packages is essential for assessing fruit quality and ripening progression, particularly through its impact on firmness. This knowledge is crucial for the development of innovative techniques aimed at slowing down the ripening process and enhancing shelf life. This research project is structured into three main components: the first involves modeling ethylene transmission through perforated fruit packaging, the second entails evaluating the ethylene removal efficacy of a commercial scavenger at various temperatures, and the third focuses on developing an integrative model that incorporates fruit physiology, perforation dynamics, and scavenger performance for predicting ethylene accumulation within fruit packages.
